Mexican cuisine: How to build the flavors you love from down south

Mexican cuisine is one of the most versatile and flavorful cuisines worldwide. It’s a culinary art that combines elements of Native American, Spanish, and other cultures to create dishes that are packed with flavor. If you want to build the flavors you love from down south, a few essential tips can help you start mastering Mexican cooking.

The first step to creating delicious Mexican cuisine is understanding its ingredients’ basics. The main components of traditional Mexican food are tomatoes, chiles, onions, garlic, cilantro, oregano, and limes. Most dishes contain meat or seafood like beef or chicken and mixed beans. These ingredients work together to create the bold and complex flavors for which Mexican cuisine is known.

Once you understand the ingredients, it’s time to begin assembling your dish. Start by sautéing onions, garlic, and chiles in oil until they become fragrant. Next, add tomatoes and any other vegetables or meats you are using. Allow these ingredients to cook together before adding spices like cumin, oregano, cilantro, or paprika. These spices will bring out the flavor of the other ingredients and help you to season your dish correctly.

A key element in building great flavors from down south is learning to use chiles correctly. Chiles come in different levels of spiciness, so it’s crucial to understand which ones will work best in your dish. To temper the heat, you can add sour cream or cheese to balance out the spiciness of the chiles. Additionally, roasting and pureeing your chiles can help create a more profound, smokier flavor integral to many Mexican dishes.

The most famous Mexican dishes you can re-create at home

Mexican cuisine is one of the most beloved in the world, and many people turn to it when they want something flavorful and filling for dinner. Fortunately, many Mexican dishes can be easily re-created at home with simple ingredients.

Tacos

One of the most popular Mexican dishes is tacos. The classic taco consists of a crunchy corn or flour tortilla filled with succulent meats, fresh veggies, melted cheese, and zesty sauces. To make your tacos at home, cook the desired meat (beef or chicken) with taco seasoning and assemble all your desired toppings. For an extra flavor boost, fry up some small strips of bacon to garnish the tacos. Also, try making birria tacos, an incredibly delicious slow-cooked stewed taco. 

Tamales

Tamales are another Mexican classic that can be easily re-created at home. Tamales consist of masa (a dough made from ground maize) filled with flavorful proteins, spices, and seasonal vegetables. Once the tamales are assembled, they can be steamed or boiled to create a delicious and filling meal.

Enchiladas

A classic Mexican dish that is relatively easy to make is enchiladas. Soft corn tortillas are rolled around savory fillings like shredded chicken or beef and topped with a rich sauce. To make enchiladas at home, preheat your oven to 350 degrees Fahrenheit and begin by simmering your protein source in a saucepan with garlic powder, oregano, cumin, and chili powder until cooked through. Allow this mixture to cool off before assembling your enchiladas by rolling them up in warm tortillas. Top these off with an enchilada sauce such as ranchero sauce or mole poblano before baking them in the oven for 25 minutes or until they’re-they’re hot and bubbly.

Fajitas

Another iconic Mexican dish is fajitas. Fajitas are grilled meats like steak or chicken served on top of warm tortillas alongside sautéed bell peppers and onions. To make fajitas at home, marinate your meats overnight in lime juice combined with garlic powder, cumin, chili powder, and other spices, then grill them over high heat until cooked through on both sides. Serve these atop warm flour tortillas, sautéed bell peppers, and onions for a delicious meal to feed the whole family.

Guacamole

No Mexican meal is complete without some homemade guacamole! Guacamole is a creamy and zesty dip made with avocados, lime juice, chopped onions, cilantro, jalapenos, tomatoes, garlic powder, and salt. Combine all these ingredients in a bowl and mash them together to form the perfect dip for tacos or chips.

Re-fried black beans

Mexican cuisine is also known for its re-fried black beans, a staple at most Mexican restaurants. To make them at home, fry some onions and garlic in oil until fragrant before adding cooked black beans and simmering until the beans become soft. Finally, mash the bean mixture with a potato masher or fork to create a thick paste that can be used as a side dish, filling for tacos, or topping on nachos or burritos.
